Ancient Incas called quinoa the mother of all grains. Recently quinoa has started to be grow in mountainous areas of North America. Rinse well before cooking. Ratio: 1 part quinoa to 2 parts water. Can be roasted before cooking. Boil for 15-20 minutes, until all liquid in the pot is absorbed. Then remove from a heat and let it stand for about 5 minutes. Cooked quinoa is pleasantly crispy.
