    Spelt Flour Pancakes

    Ingredients:


    3 tablespoons butter, melted and slightly cooled
    1 cup (250 ml) plain full-fat yogurt
    2 large eggs
    2 teaspoons vanilla extract
    ¾ cup (90 g) whole-wheat spelt flour
    ½ cup (60 g) all-purpose flour
    2 tablespoons sugar
    2 teaspoons baking powder
    ½ teaspoon salt
    ¼ cup (60 ml) milk (if needed)
    butter (for the pan)

    Directions:


    1. Melt the butter and set aside to cool.
    2. In a large bowl, whisk together the yogurt, melted butter, eggs, and vanilla extract.
    3. In the same bowl, whisk together the spelt flour, all-purpose flour, sugar, baking powder, and salt.
    4. Carefully mix only the “dry” ingredients first. Then, use a fork or spatula to mix the “wet” ingredients into the “dry” ingredients.
    5. Gradually add the milk (a ladle at a time) until the pancake batter reaches your desired consistency.
    6. Heat a large cast iron skillet or heavy-bottomed nonstick skillet over medium-high heat. Add a knob of butter, melt, and spread evenly over the surface of the pan.
    7. Pour the pancake batter into the pan and cook until bubbles appear on the surface and the batter is slightly dry. Flip the pancakes and cook on the other side for 2-3 minutes.
