Ingredients:
1 large cucumber, finely chopped
1 cup plain yogurt (you can use vegan)
1/2 teaspoon minced mint (to taste)
1 clove garlic, minced
1/2 teaspoon salt (to taste)
Directions:
1. Combine all ingredients in a bowl and mix.
2. Add more salt if needed. Serve the salad cold.
