    Grilled Halloumi Cheese

    Grilled halloumi cheese is a great appetizer or topping for salads and sandwiches!


    Ingredients:


    225g halloumi cheese, cut into 1cm slices
    2½ tbsp extra virgin olive oil
    1/2 tsp dried oregano
    1 lemon, halved
    1½ tsp chopped fresh thyme
    To serve: pita bread (optional)

    Directions:


    1. Preheat grill to medium-high (around 200 degrees Celsius). Make sure your grill is VERY clean, otherwise the halloumi may burn.
    2. In a small bowl, combine 1½ tbsp olive oil and oregano.
    3. Slice halloumi cheese into 1cm thick slices.
    4. Brush both sides of the halloumi with the marinade.
    5. Grease the grill generously with oil. Grill the halloumi for 2 to 6 minutes, turning once or twice, until grill marks appear. Place the lemon cut side down on the grill and grill until grill marks appear. If you want to grill the pita, brush it with olive oil, then grill for a minute or two on each side until heated through.
    6. Transfer the grilled halloumi and lemon to a plate. Drizzle the cheese with the remaining 1/2 tablespoon olive oil. Squeeze the grilled lemon over the top. Sprinkle with thyme. Serve the cheese warm with pita bread, mixed into a salad, or however you like.
