    Tabouli Salad (Tabbouleh)

    Try this oriental salad with extra-fine bulgur, parsley, mint and vegetables!


    Ingredients:


    1/2 cup extra-fine bulgur
    4 firm tomatoes, very finely chopped
    1 long cucumber, very finely chopped
    2 bunches parsley, stems removed, washed and well-drained, very finely chopped
    12-15 fresh mint leaves, stems removed, washed, well-drained, very finely chopped
    Onion leaves, very finely chopped
    Salt
    3-4 tablespoons lime or lemon juice
    3-4 tablespoons extra virgin olive oil
    To serve: romaine lettuce leaves (optional)

    Directions:


    1. Wash the bulgur and soak in water for 5-7 minutes. Drain well - squeeze the bulgur wheat with your hands to remove excess water. Set aside.
    2. Chop the above vegetables, herbs and spring onions very finely. Be sure to place the tomatoes in a colander to drain any excess juice.
    3. Place the chopped vegetables, herbs and spring onions in a bowl. Add the bulgur and season with salt. Mix gently.
    4. Add the lime juice and olive oil. Mix again.
    5. Cover the salad and refrigerate for 30 minutes. Then transfer to a serving plate. You can serve with pita bread, romaine lettuce, hummus, eggplant spread, etc.
