Ingredients:
3 small to medium zucchini, quartered lengthwise and halved horizontally
Extra virgin olive oil (for drizzling)
Sea salt and freshly ground black pepper
Juice of one small lemon
Lemon Yogurt with Feta and Mint:
1/2 cup Greek yogurt, whole milk
Zest of one small lemon
1/2 clove garlic, finely chopped
1/4 cup crumbled feta cheese
1/4 cup fresh mint
Pinch of red pepper flakes
Sea salt and freshly ground black pepper
Directions:
1. Preheat grill to high heat. Drizzle zucchini lightly with olive oil and season with a pinch of salt and pepper. Grill cut side down for 2 minutes, then flip and grill skin side down for 3-4 minutes (until browned). Remove from grill, place on a plate, and drizzle with lemon juice.
2. In a small bowl, combine yogurt, lemon zest, garlic, and 1/4 teaspoon salt. Spread yogurt on a medium serving plate, top with zucchini, feta cheese, mint, and red pepper flakes. Season to taste, and serve.
