Ingredients:
4 cups shredded green cabbage
4 cups shredded red cabbage
1 red bell pepper, stemmed, seeded, and very thinly sliced
1 cup thinly sliced carrots
1/2 cup chopped fresh cilantro
1/2 cup toasted chopped almonds or pumpkin seeds
For the dressing:
1/4 cup avocado oil
1/4 cup apple cider vinegar
2 tablespoons peanut butter, creamy
1 tablespoon maple syrup
1 tablespoon toasted sesame oil
1 clove garlic, minced
3/4 teaspoon sea salt
Instructions:
1. In a large bowl, combine the green and red cabbage, red bell pepper, carrots, and cilantro.
2. Make the dressing: In a medium bowl, combine the avocado oil, vinegar, peanut butter, maple syrup, sesame oil, garlic, and salt.
3. Pour the dressing over the cabbage mixture and toss to coat. Let the cabbage sit for 10 minutes to soften.
4. Season to taste and sprinkle with almonds. Toss and serve.
