This Italian condiment goes well with everything from grilled chicken to bean stew!
Ingredients:
1 cup fresh parsley leaves (30 g)
1 clove garlic, halved and coarsely chopped
Zest of 1 lemon
Extra virgin olive oil (optional)
Directions:
Place parsley leaves, garlic, and lemon zest on a clean cutting board. Using a sharp knife, chop the mixture into small pieces. Continue to chop until all ingredients are very finely chopped, fluffy, and evenly sized. Transfer to a bowl. Store leftovers in an airtight container in the refrigerator (up to a day). For longer storage, stir in 1-2 tablespoons of extra virgin olive oil and refrigerate in an airtight container with a lid (up to 4 days).
