    Mango Avocado Shrimp Salad

    Ingredients:

    450g shelled “raw” shrimp
    2 large mangoes, diced
    2 avocados, diced
    2 celery stalks, sliced
    1 red bell pepper, diced
    1/4 cup finely chopped cilantro
    1/4 cup finely chopped red onion

    For the honey and lime dressing:
    3 tablespoons extra virgin olive oil
    2 tablespoons fresh lime juice
    1 teaspoon honey
    1 clove garlic, minced
    salt and ground black pepper (to taste)

    Directions:


    1. Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes.
    2. While the shrimp are boiling, prepare a “bath” of ice water. Transfer the shrimp to the ice water using a colander. Let cool for 3 minutes, then drain.
    3. Prepare the salad: Place the shrimp, mango, avocado, celery, bell pepper, cilantro, and red onion in a bowl.
    4. Prepare the salad dressing: In a small bowl, whisk together the olive oil, lime juice, honey, garlic, salt, and pepper.
    5. Pour the dressing over the salad and toss.
