Ingredients:
3/4 cup raw cashews
1/3 cup water (plus 2 tablespoons if needed)
1 medium Jalapeno pepper, seeded
1 clove garlic
2 tablespoons fresh lemon juice
3/4 teaspoon salt
1/2 teaspoon onion powder
Freshly ground black pepper
Directions:
1. Soak cashews in 2 cups warm water for at least 2 hours. You can also use a faster method: place the raw cashews in a pot of water and place over high heat. Bring the water to a boil, then immediately turn off the heat; let the cashews soak in the hot water for about 30 minutes, then drain the water.
2. Once the cashews are soaked, prepare the sauce: blend the drained cashews, fresh water, jalapeno, garlic, freshly squeezed lemon juice, salt, onion powder, and black pepper in a blender on high speed until smooth. If you want a thinner sauce, add 1-2 tablespoons more water.
Yield: about 1 cup sauce
