Ingredients:
3/4 cup plant-based milk (unsweetened soy milk works best)
1/4 cup plain yogurt of your choice
3 tablespoons rolled oats
2 tablespoons toasted pecans
1 teaspoon MATCHA
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
1/4 teaspoon vanilla extract or paste
1 large frozen banana
1 scoop vegan vanilla protein powder (optional)
Handful of ice cubes (optional)
Instructions:
In a stand mixer, combine the plant-based milk, yogurt, rolled oats, pecans, MATCHA, cinnamon, salt, vanilla, frozen banana, protein powder (if using), and ice cubes (if using). Blend on high speed until smooth (about 1 minute).
NOTE: If you want to get a “swirl” effect on the glass, use the back of a spoon to spread a little yogurt on the inside rim of the glass. Make some KOICHA (thickened MATCHA) and put some of it in the bottom of the glass. You will see light green “swirls” as you pour the cocktail. Keep in mind that KOICHA will greatly enhance the flavor and caffeine content of the cocktail!
