    Frozen Yogurt Cups

    This is a healthy snack that is perfect for breakfast!

    Ingredients:


    For the base:
    3 pitted MEDJOOL dates (soaked in hot water and drained)
    1/2 cup nuts or seeds of your choice
    1/4 cup rolled oats

    For the cream layer:
    140 g yogurt (e.g. coconut or soy)
    100 g vegan cream cheese (or just use more yogurt if you want a
    “lighter” dessert)
    1/3 cup sweetener of your choice (e.g. xylitol)
    100 g strawberries (optional)
    1½ tablespoons lime or lemon juice

    For garnish:
    Fresh berries (e.g. strawberries, raspberries, blackberries)
    Granola

    Directions:


    1. First, soak the dates in hot water for 2-4 minutes, then drain. Blend the dates, nuts and oatmeal in a food processor or blender.
    2. Press the date and nut mixture firmly into 8 silicone muffin cups.
    3. Then blend the yogurt, cream cheese (if using), sweetener, lemon and fruit until smooth. Taste and adjust the sweetness if necessary.
    4. Pour the yogurt mixture over the base and add toppings such as berries and granola.

    5. Freeze the dessert for 1-2 hours (until the desired texture is softer or firmer). Let the dessert thaw for at least 15 minutes before eating to soften and enhance the flavor.
