You can serve this spicy coriander sauce simply with bread (as a dipping sauce), spread it directly on a slice of bread and make sandwiches, serve it with scrambled eggs, fish or meat dishes, etc.
You can also serve this sauce with hummus, tahini (sesame paste) sauce, etc.
Ingredients:
6 jalapenos or hot green chilies: cut off the ends and cut into slices (remove the seeds if you want less heat)
2 cloves garlic, peeled
Salt
1 cup fresh cilantro leaves (you can omit if you don’t like cilantro)
1/2 cup fresh parsley
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground green cardamom
1/2 cup extra virgin olive oil
Juice of 1 lemon
Instructions:
1. Chop the jalapenos and garlic. Place the jalapenos, garlic, and a pinch of salt in a food processor and process until coarsely chopped.
2. Then add the fresh cilantro, parsley, cumin, ground coriander, and cardamom. Blend in a food processor until you have a thick, smooth paste.
3. Transfer the sauce to a bowl. Add the olive oil and lemon juice and mix.
Yield: about 1/2 cup
