This is a delicious alternative to regular mashed potatoes.
Ingredients:
1 medium cauliflower (900 g), chopped
2 tablespoons melted butter
7 cloves garlic, sautéed
1/8 to 1/4 teaspoon French mustard DIJON
1/4 to 1/2 teaspoon sea salt
Freshly ground black pepper
For serving: chives (optional)
Directions:
1. Bring a large pot of salted water to a boil. Add the chopped cauliflower and cook until tender (about 10 minutes). Drain the water and place the cauliflower in a food processor.
2. Mash the cauliflower with the butter, garlic, mustard, salt, and pepper. Season to taste. You can also season with chives.
