    Coconut Chia Pudding

    This creamy chia pudding is a sweet dessert and a great idea for breakfast!

    Ingredients:


    1 can (400 g) low-fat coconut milk
    5 tablespoons chia seeds
    1 tablespoon honey or maple syrup
    1/2 teaspoon pure vanilla extract
    A small pinch of salt
    Optional toppings: fresh fruit, jam, nuts, etc.

    Directions:


    1. Mix the coconut milk, chia seeds, maple syrup, vanilla, and salt in a bowl - the chia seeds should be evenly distributed (you can simply mix with a fork). Cover and refrigerate overnight. If you remember, mix again just before bed (if you forget, no problem).
    2. Mix again in the morning to evenly distribute the chia seeds. Taste and add more maple syrup if you want a sweeter pudding. Add your choice of toppings.
