Chia Seed Pudding with Dates and Pistachios – a naturally sweetened snack or dessert.
A great breakfast idea!
Ingredients:
1 cup unsweetened almond milk (or other milk of your choice)
2-3 MEDJOOL dates, pitted, coarsely chopped
2 tablespoons pistachios, unsalted, shelled, chopped
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/4 cup chia seeds
Fresh berries for serving (optional)
Instructions:
1. In a small saucepan over medium-high heat, heat the milk, stirring constantly, until it almost boils. Remove from heat and immediately stir in the dates, pistachios, cardamom, and cinnamon. Soak for about 15-20 minutes to soften the dates and pistachios and to flavor the milk.
2. Pour the milk, date and pistachio mixture into a blender or food processor and blend until smooth.
3. Transfer the milk mixture to a bowl and stir in the chia seeds. Let sit for about 5 minutes, then stir again. Pour into smaller bowls. Cover and refrigerate for a few hours (or overnight).
4. Garnish with chopped pistachios and fresh berries before serving. Serve the pudding cold.
