    Matcha Pistachio Energy Balls

    Ingredients:


    3/4 cup (100 g) raw cashews
    1/4 cup (30 g) raw shelled pistachios
    12 pitted MEDJOOL dates
    1/4 cup (25 g) unsweetened shredded coconut
    2 teaspoons MATCHA powder
    1 tablespoon coconut oil
    1/4 cup (30 g) coarsely chopped pistachios (for rolling)

    Directions:


    1. Place cashews, pistachios, dates, shredded coconut, MATCHA, and coconut oil in a food processor. Process for about one minute (until finely chopped and combined).
    2. Use a medium-sized spoon or cookie/ice cream scoop to form balls. Then roll between your palms to form evenly sized balls.
    3. Once all the balls are formed, roll them in the chopped pistachios, pressing them firmly into the balls.
    4. Refrigerate for 15 minutes to firm up a bit. Delicious!
