Ingredients:
150 g fresh spinach
1 cup thinly sliced strawberries
1/3 cup thinly sliced red onion
1/2 cup toasted pecans
60 g crumbled feta cheese
Sea salt and freshly ground black pepper
For the salad dressing:
2 tablespoons white wine vinegar
2 tablespoons finely chopped shallots
1½ tablespoons honey
1 teaspoon poppy seeds
1/2 teaspoon DIJON French mustard
1/4 teaspoon sea salt
1½ teaspoon mayonnaise (optional)
1/4 cup extra virgin olive oil
Directions:
1. Prepare the salad dressing: in a bowl, whisk together the white wine vinegar, shallots, honey, poppy seeds, mustard, salt and mayonnaise (if using). While whisking the dressing ingredients, add the olive oil. Continue whisking. Another way: Place all ingredients in a jar with a tight-fitting lid and shake well.
2. Place the spinach, strawberries and red onion in a large bowl. Add a little salad dressing and mix everything together.
3. Add the pecans and feta and mix gently. Add more dressing if needed. Season with salt and pepper to taste. Enjoy!
