Grilled zucchini is a quick and easy side dish that goes well with a variety of main courses.
Fresh herbs and lemon juice will give the zucchini a refreshing flavor.
Ingredients:
2 medium-sized zucchini, cut lengthwise into half-centimeter thick strips
Extra virgin olive oil (for drizzling)
1/4 teaspoon garlic powder
Lemon slices
Freshly chopped parsley or basil leaves
Sea salt and freshly ground black pepper
Directions:
1. Preheat grill or grill pan to medium heat.
2. Place zucchini on a large plate or tray, drizzle with olive oil, and season with garlic powder, salt, and pepper.
3. Grill for 1-3 minutes on each side (until zucchini is tender and has dark grill marks on the surface).
4. Remove from grill and drizzle with lemon juice. Season with fresh herbs and other seasonings (to taste).
