Ingredients:
300g almonds (2 cups)
1/4 tsp salt
2 tsp cinnamon (optional)
3 tbsp chia seeds
Directions:
1. Spread the almonds on a baking sheet; bake in the oven at 180°C for 8-10 minutes. The almonds should darken and start to smell like toasted nuts.
2. Let the almonds cool for 5 minutes. Place them in a blender with the cinnamon and salt. Blend in 1-minute intervals, scraping down the sides of the blender (if necessary).
3. At first they will just turn into chopped nuts, then into coarse crumbs, and finally into fine, moist crumbs. At this stage, they will start to clump together, and will eventually be blended to a buttery consistency.
4. Once you have a smooth nutty texture, add the chia seeds to the blender. Blend until smooth.
NOTE: Be patient when making your homemade nut butter! If you are using a lower-powered blender or food processor, the process may take a little longer. Just be patient, scraping down the sides of the bowl (if necessary), and you will soon have delicious homemade nut butter!
