    Feta & Herb-Crusted Salmon

    Ingredients:


    1 kg salmon fillet
    3/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1/4 cup mayonnaise
    1 ½ cups crumbled feta cheese (about 200 g)
    1/4 cup chopped fresh parsley
    2 tablespoons chopped fresh dill
    1 teaspoon finely grated lemon zest
    1 clove garlic, finely chopped
    Lemon slices (for serving)

    Directions:


    1. Preheat oven to 200 °C. Line a large baking tray with foil and grease with fat.
    2. Place the salmon on the prepared tray, skin side up (season the skin with salt and pepper and brush with mayonnaise).
    3. In a bowl, combine the feta cheese, parsley, dill, lemon zest, and garlic (leave the feta crumbled). Spread the mixture over the salmon, which has been coated with mayonnaise.
    4. Bake the salmon for about 25 minutes. Serve warm with lemon wedges.
