Ingredients:
1 ½ tablespoons Italian seasoning
1/4 cup extra virgin olive oil
3 cloves garlic, minced
1 teaspoon ground paprika
1/2 teaspoon salt
1/4 teaspoon ground black pepper
450 g chicken breast, cut into bite-sized pieces
4 cups broccoli florets (~2 broccoli)
1 medium zucchini, cut into crescent-shaped slices
2 red peppers, cut into 2-3 cm pieces
onion, chopped
Additional ingredients (optional): chopped parsley and grated PARMIGIANO REGGIANO cheese
Directions:
1. Preheat oven to 200 °C. Prepare the sauce: in a small bowl, mix olive oil, Italian seasoning, garlic, ground paprika and salt. Set aside.
2. Place chicken, broccoli, zucchini, bell pepper, and onion in a large bowl. Drizzle with sauce and toss to coat well.
3. Spread sauce-coated ingredients onto a baking sheet.
4. Bake in oven for 20-25 minutes, until chicken is cooked through and vegetables are lightly browned. Garnish with fresh chopped parsley and grated PARMIGIANO REGGIANO before serving.
