    Egg Salad Sandwich

    A great idea for breakfast!
    Serve with bread (as a sandwich), crackers, green leafy salad or just as an egg salad without any additional toppings!


    Ingredients:


    6 eggs
    1/4 cup mayonnaise
    2-3 teaspoons French mustard DIJON
    1 teaspoon freshly squeezed lemon juice
    1/4 teaspoon sea salt
    Freshly ground black pepper
    1/4 cup finely chopped red onion
    1 tablespoon fresh chives, chopped
    1 tablespoon fresh dill, chopped
    1 teaspoon capers (optional)

    Directions:


    1. Hard boil the eggs. Then peel and chop them.
    2. Mix the mayonnaise, mustard, lemon juice, salt and a few pinches of ground pepper in a bowl.
    3. Then stir in the onions, along with the eggs, chives, dill, and capers (if using).
    4. Cover and refrigerate for 20 minutes. Then stir, season with additional seasoning (to taste), and serve.
