Ingredients:
1-2 cloves garlic
1/2 teaspoon salt
3/4 cup TAHINI (sesame) paste
1/2 cup freshly squeezed lime or lemon juice
1/4 cup cold water (plus more if needed)
1 cup chopped fresh parsley leaves (optional)
Directions:
1. In a mortar and pestle, crush the garlic cloves with salt until they form a paste (or simply crush the garlic and season with salt).
2. In a food processor, puree the garlic, TAHINI paste, and lemon juice. Add a little water and blend again until you reach the desired consistency.
3. Transfer the sauce to a serving bowl and stir in some fresh chopped parsley if desired. Enjoy!
NOTE: Add water gradually until you reach the desired consistency. The TAHINI sauce should be quite runny (like salad dressing). If you want a “dip” consistency, simply add less water.
Yield: 12 tablespoons sauce
