Drizzle this creamy dressing over salads, grilled vegetables, or even pizza!
You can use feta dressing to replace mayonnaise when making sandwiches.
Ingredients:
1/2 cup plain Greek yogurt
170 g feta cheese (170 g feta cheese blocks in brine are best (not pre-crumbled cheese))
1 lemon (juiced)
3 tablespoons extra virgin olive oil
1 clove garlic, grated
Water (up to ½ cup)
Directions:
1. In a blender or large food processor with an “S” blade, puree the sauce ingredients: Greek yogurt, feta, grated garlic, lemon juice, about 3-4 tablespoons extra virgin olive oil, and 2-3 tablespoons water.
2. Blend until the sauce has a creamy consistency. Add more water if needed (add 1 tablespoon at a time, checking the consistency of the sauce).
3. You can add 2 tablespoons of finely chopped fresh parsley, basil or mint (optional).
Yield: 24 tablespoons of sauce
