Ingredients:
1/2 cup light brown sugar or coconut sugar
1 cup natural peanut butter (any consistency works)
2 teaspoons vanilla extract
1 cup white whole wheat flour
1 cup rolled oats
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk (you can use plant-based milk)
3/4 cup dark chocolate chips or pieces (about 150 g chopped dark chocolate)
Melt dark chocolate for drizzling over baked bars (optional)
Directions:
1. Preheat oven to 180 °C.
2. Line a baking dish with parchment paper.
3. Using a hand-held electric mixer, mix the brown sugar with the peanut butter on medium speed for about 3 minutes. Add vanilla.
4. Add flour, oatmeal, salt and baking soda – the batter will be very thick.
5. Slowly and evenly add milk while mixing.
6. Add chocolate chips while mixing with your hands.
7. Press the batter into the prepared baking pan – wet hands will come in handy here.
8. Bake for about 15-20 minutes.
9. Leave to cool completely. Then cut into squares.
10. Once cool, drizzle with melted dark chocolate.
