Stir fry is a popular cooking method in Asia.
In this way, the ingredients are fried in a wok, constantly stirring; a small amount of very hot oil is used.
We recommend serving with rice, sesame seeds, chopped spring onions.
Ingredients:
For the stir-fry:
1 package (400 g) of firm or extra firm TOFU
2 tablespoons of corn or potato starch
½ teaspoon each of: salt, smoked paprika and black pepper
2 tablespoons of oil, e.g. avocado oil
½ medium or large broccoli (250 g), cut into small florets
1 red bell pepper, sliced
3 garlic cloves, grated/minced
1 tablespoon fresh ginger, grated/minced
For the sauce:
½ cup (120 ml) low-salt vegetable stock (or water)
3 tablespoons soy or TAMARI sauce
2 tablespoons rice vinegar
2 tablespoons maple syrup (or any other sweetener)
1/2 tablespoon sesame oil
1 teaspoon chili sauce (optional)
1 tablespoon corn or potato starch
To serve:
Cooked white or brown rice (or Asian noodles)
Sesame seeds
Chopped scallions
Red pepper flakes
Directions:
1. First, press the TOFU for 15-20 minutes - wrap it in a clean kitchen towel and place under a heavy pan and/or several heavy books.
2. Meanwhile, cut the broccoli into bite-sized florets, chop the bell pepper, and finely chop the garlic and ginger.
3. Then cut the TOFU into 2 cm cubes and place in a resealable plastic bag along with the cornstarch, salt, smoked paprika, and black pepper. Shake to coat the TOFU well.
4. Then mix all of the sauce ingredients listed above together in a jar and set aside.
5. Heat a large non-stick frying pan (or wok) with oil over medium-high heat. Once hot, add the TOFU in a single layer and cook for 6-8 minutes, turning every 1-2 minutes to brown on all sides. Then transfer to a plate.
6. Add more oil to the pan, add the broccoli and bell pepper and fry for a few minutes, stirring constantly (until softened and crispy).
7. Then add the chopped garlic and ginger to the pan and fry for a minute, stirring. Pour in the sauce and simmer over low heat until thickened. If you want a thicker sauce, add a little cornstarch mixed with water. If you want a thinner sauce, add more water or broth.
8. Finally, remove from heat and add the TOFU and stir well to distribute everything evenly.
