This is a delicious oven-baked salmon. You can use any herbs you have (scallions, dill, parsley, coriander...).
We recommend serving with a Greek salad!
Ingredients:
Extra virgin olive oil
1 lemon (grated zest and juice)
1–2 garlic cloves, finely chopped
2 teaspoons Greek oregano
3 tablespoons chopped fresh dill (plus more for serving)
450 g salmon fillet
Salt
Black pepper
Chopped scallions
1 cup cherry tomatoes
Directions:
1. Place the rack in the very middle of the oven. Preheat the oven to 200 °C. Lightly grease the baking dish with oil.
2. Prepare the Greek-style dressing: In a small bowl, combine the lemon juice, half of the lemon zest, garlic, oregano, dill, and enough olive oil (about 1/3 cup) to coat the salmon generously.
3. Drain the salmon and season both sides with salt and pepper. Place in the prepared baking dish, sprinkle with scallions and cherry tomatoes. Pour the prepared Greek dressing over the top.
4. Bake in the preheated oven for about 8–15 minutes. The exact baking time depends on the size and thickness of the salmon you use. Sprinkle with the remaining lemon zest and dill and serve.
