Ingredients:
For the Tahini Sauce:
1/4 cup (60 ml) TAHINI (sesame paste), preferably liquid
1 tablespoon olive oil
2 tablespoons lemon juice
3 tablespoons water
1 small clove garlic, minced
Salt and pepper (to taste)
For the Sandwiches:
16-20 falafels of your choice
4 flatbreads of your choice, such as pita bread, sandwich bread...
1/2 long cucumber, sliced
2 medium tomatoes, sliced (or 1 cup cherry tomatoes, halved)
1 bunch green lettuce leaves
1/2 cup pickled red onion or chopped unpickled red onion
1/2 cup hummus (homemade or store-bought)
Cilantro and/or parsley (for serving)
Directions:
1. Prepare the sauce: In a small bowl, whisk together the TAHINI, olive oil, lemon juice, garlic, water, salt, and pepper. Taste and adjust seasoning if necessary.
2. If the falafel is not freshly made or store-bought, warm it up.
3. Spread hummus on each slice of your chosen bread.
4. Top with lettuce, cucumber, tomato, and pickled onions.
5. Then add the falafel.
6. Drizzle with the TAHINI and garnish with fresh herbs.
7. Fold or roll to form a sandwich.
