Ingredients:
¼ cup coconut oil
½ cup maple syrup
¼ cup milk (you can also use plant-based (almond) milk)
2 tablespoons unsweetened cocoa powder
¼ cup (plus 2 tablespoons) peanut butter (creamy consistency) - if the butter is unsalted, add a little salt to the cookie mixture
½ teaspoon vanilla extract
1½ cups oatmeal
Directions:
1. Line a large baking sheet with parchment paper.
2. Melt the coconut oil in a saucepan over medium heat. Add the maple syrup, milk, cocoa, peanut butter, and vanilla and whisk. Cook, stirring frequently, for 2 minutes.
3. Remove from heat and stir in the oatmeal. Using a spoon or a slotted spoon, scoop the batter onto the prepared baking sheet. Refrigerate the cookies for 30 minutes (or until firm).
