    Roasted lentils

    Oven-roasted brown lentils are a delicious snack and an easy addition to salads or soups!


    Ingredients:


    ¾ cup (150 g) dry brown lentils (or 1 can (400 g) canned lentils, drained and rinsed under running water)
    1 tablespoon oil
    ½ teaspoon garlic powder
    ½ teaspoon onion powder
    ½ teaspoon ground smoked paprika
    ½ teaspoon salt

    Directions:


    1. If using dry brown lentils, read all steps in order. If using canned brown lentils, skip the first four steps.
    2. Rinse and drain the lentils to remove any dirt.
    3. Bring a pot of water (520 ml or 2 ¼ cups water) to a boil with a pinch of salt or vegetable stock powder.
    4. Add the lentils, reduce the heat and simmer uncovered for 20-25 minutes (until the lentils are tender but still hold their shape).
    5. Drain the excess liquid and pat the lentils dry with a clean kitchen towel.
    6. Preheat the oven to 190 degrees and line a baking sheet with baking paper.
    7. Spread the lentils on the sheet, add the oil and spices and stir so that the lentils are evenly coated.
    8. Spread the lentils in a single layer on the baking sheet and bake for 15 minutes. Then stir/flip and return to the oven for 10-15 minutes - until crispy.
    9. Leave the fried lentils to cool at room temperature (they become crispier as they cool).
