    Spinach tortilla rolls with feta cheese and olives

    These rolls can be made in just 10 minutes!
    You can also add extras not mentioned in the recipe: 1/2 cup chickpeas, tuna, salmon, chicken, etc.
    You can easily make this recipe vegan - just leave out the feta cheese.
    You can also choose gluten-free tortillas.


    Ingredients:


    2 large tortillas with spinach
    1/2 cup hummus of your choice
    1/3 cup crumbled feta cheese
    1/4 cup chopped tomatoes
    1/4 cup chopped KALAMATA olives (pitted)
    2 cups fresh baby spinach

    Directions:


    1. Lay the tortillas on a cutting board. Spread hummus evenly on each one. Then distribute the feta, tomato, olives and spinach on the tortillas - completely cover them with the filling.
    2. Flatten and press the filling with your hands. Roll the tortillas tightly and place them on a cutting board or plate.
    3. Refrigerate the tortilla rolls for 30 minutes (or up to 2 hours) – you can wrap them in plastic wrap or leave them uncovered.
    4. Remove the rolls from the refrigerator and cut each into about 8 pieces.
    5. Arrange the rolls on a large plate and serve.
