    Asparagus Green Salad

    This is a vegan salad with asparagus and lemon-olive oil dressing!


    Ingredients:


    1 bunch of asparagus
    3 handfuls of leafy greens of choice
    ½ cucumber, chopped
    Scallions, chopped
    1 avocado, chopped
    3-4 radishes, chopped
    2 tablespoons of various seeds (sunflower, pumpkin, etc.)

    For the salad dressing:
    5 tablespoons (30 ml) olive oil
    ½ lemon (squeezed juice)
    2 tablespoons maple syrup
    1 teaspoon French mustard DIJON
    a pinch of salt

    Directions:


    1. Preheat the oven to 180°C.
    2. Cut each asparagus into three parts, remove the ends.
    3. Place the asparagus on a baking sheet lined with baking paper. Drizzle with 1 teaspoon olive oil and a pinch of salt. Bake in the oven for about 20 minutes.
    4. Meanwhile, mix all other salad ingredients in a large bowl.
    5. When the asparagus is tender, add it to a salad bowl.
    6. Make the salad dressing: In a small glass jar, whisk together the olive oil, lemon juice, maple syrup, DIJON mustard, and salt.
    7. Taste and add more salt if needed.
    8. Pour the desired amount of dressing over the salad and toss to combine.
