Oven-roasted cauliflower with tahini sauce is a simple and healthy side dish that goes well with a variety of main dishes.
Ingredients:
For the cauliflower:
1 medium cauliflower
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
salt and pepper
For the TAHINI sauce:
¼ cup TAHINI (sesame paste - preferably a thinner consistency)
1 tablespoon olive oil
2 tablespoons lemon juice
1 clove garlic, minced
3 tablespoons water
salt and pepper (to taste)
To serve:
2 tablespoons capers
Parsley
Instructions:
1. Preheat oven to 225°C and place a couple of baking sheets in the oven to preheat.
2. Divide the cauliflower into florets. Place them in a bowl and mix with 1 tablespoon of olive oil and 1 tablespoon of lemon juice. Season with salt and pepper as well.
3. Remove the hot baking sheets from the oven. Add the cauliflower florets on top (shake to distribute evenly).
4. Return the baking sheets with the cauliflower to the oven. Bake for about 20 minutes (until lightly browned).
5. Meanwhile, mix together ¼ cup of TAHINI (sesame paste), garlic, 2 tablespoons of lemon juice, 1 tablespoon of olive oil and 3 tablespoons of water (or more if your TAHINI is quite thick). Season with salt and pepper.
6. Pour the TAHINI sauce onto a serving plate.
7. Remove the roasted cauliflower from the oven and transfer to a serving dish (on top of the TAHINI sauce).
8. Sprinkle capers and parsley over the cauliflower.
