    Oat Flour Matcha Pancakes

    Ingredients:


    1 teaspoon butter (or neutral oil)
    Dough:
    1 ½ cups (120 g) rolled oats
    1 ½ tablespoons (20 g) MATCHA powder
    3 ½ teaspoons (15 g) baking powder
    1 teaspoon salt
    1 tablespoon white sugar
    1 ¼ cups (300 ml) milk (or plant-based milk: oat/almond/soy)
    1 egg
    3 tablespoons melted butter (or neutral oil)

    Directions:


    1. Using a high-powered blender or food processor, blend the rolled oats until smooth. Place in a large bowl.
    2. Add the MATCHA powder, baking powder, salt, and sugar. Mix well.
    3. Then add the milk, egg, and melted butter and mix until smooth (just don't overmix!). Let the pancake batter sit for 5 minutes.
    4. Heat a large skillet over medium heat and lightly grease with butter.
    5. Scoop ¼ cup (60 mL) of the pancake batter into the skillet. Cook until the bottom is golden brown and bubbles form on top. When the edges of the pancake are set, flip it over with a spatula. Cook the other side until golden brown and dark green (MATCHA). Repeat this process with the remaining batter.
    6. Serve the pancakes with your favorite toppings!
