Try this Asian-inspired shrimp and rice stir-fry.
Stir-frying is a cooking method popularized in Asia.
In this method, ingredients are cooked in a wok, stirring constantly; a small amount of very hot oil is used.
Ingredients:
450g large, shelled shrimp
1 tsp salt
1/2 tsp ground white pepper
3 tbsp avocado oil
½ small onion, chopped
Scallions, chopped
2 cloves garlic, chopped
1/2 tsp minced ginger
200g frozen peas and carrots
3 eggs, beaten
650g cooked white rice
3 tbsp TAMARI soy sauce or COCONUT AMINOS sauce
2 tsp toasted sesame oil
Instructions:
1. Season shrimp with salt and pepper in a bowl. Set aside.
2. Heat 2 tbsp avocado oil in a large wok over medium-high heat. Add the shrimp in a single layer and cook for about 1-2 minutes, then flip and cook for another 30 seconds. Transfer to a plate.
3. Add the onion, garlic and ginger to the pan and stir-fry for a minute (until fragrant).
4. Add the frozen carrots and peas (no need to thaw) and stir-fry for 1-2 minutes (until warmed through).
5. Move the vegetables to the side, then add the beaten eggs and cook, slowly moving the spatula from the edges of the pan towards the centre (until the eggs are set at the bottom of the pan but still moist on top (scrambled).
6. Add the rice, shrimp, soy sauce and sesame oil to the pan. Cook, stirring constantly, until rice and shrimp are heated through (about 2 minutes)
7. Stir in chopped scallions before serving.
