Ingredients:
For the salad:
2 large ripe avocados, quartered, then 1cm thick
3 cucumbers (about 17cm long), cut into 4mm rounds (if using longer cucumbers, halve the amount of cucumbers)
1/4 red onion, finely chopped
2 tbsp dill, finely chopped (optional)
2 tbsp cilantro, roughly chopped (optional; can be substituted with parsley or extra dill)
For the dressing:
3 tbsp extra virgin olive oil
3 tbsp lime or lemon juice (or more to taste)
1/4 tsp red pepper flakes
1/4 tsp black pepper
3/4 tsp salt
Instructions:
1. Combine all salad ingredients in a large bowl. Drizzle with lime or lemon juice and oil. Also sprinkle with salt, pepper, and chili flakes.
2. Gently stir, separating the avocado slices. Taste and add more lemon juice if needed.
