    Greek Potatoes with Lemon and Garlic

    Greek Oven-Baked Potatoes with Lemon and Garlic – a great side dish that goes well with a variety of main courses!


    Ingredients:


    Spices:
    1 teaspoon black pepper
    1 teaspoon ground sweet paprika
    1 teaspoon dried rosemary
    Salt

    For the potatoes:
    4 large potatoes, peeled, washed, cut into slices
    8 large garlic cloves, minced
    4 tablespoons extra virgin olive oil
    1 lemon (juiced)
    1 ¼ cup vegetable or chicken stock
    1/2 cup grated Parmesan cheese
    1 cup parsley leaves, coarsely chopped

    Directions:


    1. Preheat oven to 200°C. Coat a large (23 x 33 cm) baking dish with a thin layer of olive oil.
    2. In a small bowl, combine the salt, black pepper, paprika, and dried rosemary.
    3. Place the potato wedges in an oiled baking dish and sprinkle with the spice mixture. Toss to evenly distribute the spices.
    4. In another bowl, combine the minced garlic, olive oil, lemon juice, and vegetable (or chicken) stock. Pour the mixture over the potatoes.
    5. Cover the baking dish with foil and bake for 40 minutes.
    6. Remove the potatoes from the oven, uncover, and sprinkle with Parmesan cheese. Return the uncovered dish with the potatoes to the oven and bake until the potatoes are fully cooked, golden brown, and crusty (about 10 to 15 minutes).
    7. Remove from oven, sprinkle with fresh parsley and serve.
