Ingredients:
3 cups cooked butter beans (equivalent to 1 cup uncooked butter beans)
⅓ cup chopped spring onions
⅓ cup finely chopped parsley leaves
1 small Chili, finely chopped (optional)
For the salad dressing:
1 lemon (juiced)
1 clove garlic, minced
2 tablespoons extra virgin olive oil
1 pinch salt (to taste)
Directions:
1. Place the cooked butter beans, chopped spring onions, parsley and Chili in a bowl (optional). You can also use canned butter beans - in that case, put them in a colander and rinse them under running water.
2. In a separate bowl, mix all the sauce ingredients listed above. Pour the sauce over the butter beans and mix everything well. Serve the salad chilled.
