    Mexican Rice (Vegan, Gluten-Free)

    This rice is also known as “Spanish” or “red”. It is very tasty and easy to make!
    We recommend serving it with Mexican dishes: burritos, enchiladas, etc.


    Ingredients:


    2 tablespoons vegan butter
    ½ onion or 2 shallots, finely chopped
    2 cloves garlic, minced
    1 cup long-grain rice
    1 ½ cup vegetable broth
    ¾ cup tomato sauce
    1 teaspoon ground paprika
    1 teaspoon cumin or saffron
    1 tablespoon lime juice
    salt (to taste)
    For serving: cilantro (optional)

    Insructions:


    1. Finely chop the onion and garlic. We recommend rinsing them well to make the rice less sticky.


    2. Melt the vegan butter in a saucepan over medium heat.


    3. When the butter is hot, add the chopped onion and garlic. Fry over medium heat for 3-5 minutes.


    4. Then add the rice and fry with the butter, onion and garlic (about 1 minute).


    5. Pour in the vegetable broth, tomato sauce, ground paprika and cumin. Stir and bring to a boil.


    6. Reduce the heat to low, cover and cook for 20-30 minutes - until the rice is cooked and absorbs all the liquid. While the rice is cooking, we recommend removing the lid several times and stirring it (so that the rice does not stick to the bottom).


    7. When the rice is cooked, squeeze in the lime juice, add salt (to taste), mix everything.


    8. Fluff the rice with a fork; serve with cilantro (optional).
