    Chicken with Basil and Lemon

    Ingredients:
    1 tablespoon extra virgin olive oil
    ½ onion, chopped
    4 garlic cloves, chopped
    700 g chicken breast, cut into 2 cm pieces
    2 tablespoons soy sauce
    ¼ teaspoon ground black pepper
    5 cups baby spinach (about 150 g)
    1 tablespoon lemon zest
    2 tablespoons freshly squeezed lemon juice
    2 cups fresh basil leaves
    Salt and pepper (to taste)

    To Serve: Cooked brown rice

    Preparation:

    1. Heat olive oil in a large pan over medium heat. Once hot, add the onion and sauté until softened (about 4 minutes). Add garlic and sauté until fragrant (about 30 seconds).

    2. Add chicken, increase heat to medium-high, and sauté for 3 minutes (stirring to cook all sides). Stir in soy sauce and black pepper. Simmer for another 3 minutes.

    3. Stir in spinach (in batches, not all at once). As it warms up, it will wilt. Then mix in lemon zest, lemon juice, and basil. Simmer, stirring, until the basil is warmed and wilted – about 1 minute. Taste and adjust seasoning with salt or pepper if needed. Serve warm with brown rice.
