Ingredients:
For Marination:
1 tablespoon light miso paste
2 teaspoons lemon juice
2 teaspoons sesame oil
2 garlic cloves, minced
For The Salad:
Florets of 1 large cauliflower
250 g frozen edamame soybeans
2 red onions, sliced
75 g almonds
120 g arugula or other greens
60 g sultana raisins
For The Dressing:
70 g natural yogurt
1 tablespoon light miso paste
1 tablespoon lemon juice
1 garlic clove, minced
Preparation:
Preheat the oven to 200°C. Prepare the marinade by mixing miso, lemon juice, sesame oil, and minced garlic.
Cut the cauliflower into florets and coat with the miso marinade. Bake for 15 minutes.
After 15 minutes, remove the tray and add edamame, onion slices, and almonds.
Drizzle with some olive oil, season with salt and pepper, and return to the oven for 10 minutes.
Prepare the dressing: dilute miso paste with lemon juice, then mix it with yogurt and minced garlic. Stir well.
After 10 minutes, remove the warm vegetables from the oven. Arrange arugula or other greens, warm vegetables, yogurt dressing, and raisins on a plate.
