    Chicken in Coconut Milk

    This delicious chicken takes just 30 minutes to prepare!
    We recommend serving with rice.


    Ingredients:


    1 onion, chopped
    1 red bell pepper, diced
    3 garlic cloves, finely chopped
    2 tablespoons olive oil
    Three chicken breasts, cut into 2-3 cm pieces
    2 tablespoons curry powder (optional)
    1 teaspoon ginger powder
    400 g full-fat coconut milk (1 can)
    1 lime (juice squeezed)
    salt and pepper
    600 g cooked white rice or cauliflower “rice”
    finely chopped fresh cilantro

    Directions:


    1. Heat the oil in a large frying pan over medium heat. Add the onion, red bell pepper, and garlic cloves. Fry for 3-4 minutes.
    2. Add the diced chicken and sprinkle the spices on top. Cook for about 5-7 minutes. Stir frequently.
    3. Add the coconut milk and lime juice and cook for another 5 minutes.
    4. Serve with rice and fresh cilantro.
