    Quinoa with Cinnamon

    Quinoa with cinnamon is a great idea for breakfast!
    Top with your favorite toppings: fresh or dried fruit, nuts, seeds.
    Gluten-free; suitable for vegans!


    Ingredients:


    ½ cup uncooked quinoa
    1 cup almond milk
    1-2 cinnamon sticks
    ½ teaspoon vanilla extract
    Sea salt
    More spices, such as ground cinnamon, nutmeg and/or ginger (to taste)

    Additional ingredients:
    Roasted chopped almonds
    Toasted coconut
    Fresh peaches, chopped
    Raspberries
    Almond milk (optional)
    Maple syrup (optional)

    Directions:


    1. Rinse the quinoa and place in a small saucepan. Add the almond milk, cinnamon sticks, vanilla and a pinch of salt. Bring to a boil over high heat, cover, and reduce heat. Simmer for 15 minutes.
    2. Remove from heat and let stand for 5 minutes or until almond milk is completely absorbed. Taste and add additional seasoning (to taste).
    3. Pour the prepared quinoa into two bowls. Top with toasted almonds, toasted coconut, peaches, and raspberries. If you want a thinner breakfast porridge, you can add a little warm almond milk. You can also serve with maple syrup.
