This is a stir-fry of rice vermicelli with SHIITAKE mushrooms, various vegetables and Asian sauce.
SHIITAKE mushrooms are a popular ingredient in Asian cuisine, and are also used in traditional Chinese medicine.
Ingredients:
200 g rice VERMICELLI noodles
2 teaspoons sesame oil
½ tablespoon grated fresh ginger
2 cloves garlic, chopped
100 g SHIITAKE mushrooms, chopped
1 medium carrot, cut into small sticks
1 red bell pepper, cut into small sticks
1 cup small broccoli florets
1 cup cabbage, cut into thin slices
Onion leaves (for serving)
Sesame seeds (for serving)
Asian BBQ sauce or Asian garlic sauce
Directions:
1. First, prepare the noodles according to the instructions on the package. Drain.
2. Meanwhile, peel and chop the garlic and ginger. Chop the mushrooms and vegetables as well.
3. Heat the sesame oil in a large frying pan (or wok) over medium heat. Once hot, add the ginger and garlic and fry for a minute.
4. Add the remaining vegetables and mushrooms and stir. Cover the pan, reduce the heat to low and cook for 7-8 minutes (until tender).
5. Add the prepared noodles and Asian sauce and mix well. Serve in bowls, garnish with finely chopped spring onions and sesame seeds.
