    No-Bake Carrot Balls (Gluten-Free)

    These are delicious carrot balls that are quick to make. Gluten-free and vegan-friendly!
    Instead of dates, you can use dried figs or apricots. You can also replace walnuts with other nuts.


    Ingredients:


    100 g (½ cup) dates, pitted
    60 g (½ cup) walnuts
    60 g (⅔ cup) rolled oats (gluten-free)
    1 teaspoon cinnamon
    ½ teaspoon ground ginger
    1 pinch salt
    100 g (¾ cup) finely grated carrots

    Directions:


    1. If the dates are dry, soak them in hot water for 5-10 minutes to soften them. Drain.
    2. Wash, peel and finely grate the carrots.
    3. Blend the dates, walnuts, oatmeal, and spices (cinnamon, ginger, and salt) in a food processor. It should be quite sticky (sticky when squeezed between your fingers).
    4. Add the shredded carrots and blend again.
    5. Divide the mixture and shape into about 16 balls.
    6. Roll the balls in coconut flakes. Alternatively, you can refrigerate the balls to firm up, then dip them in melted white chocolate.
