    Chickpea Flour Snack (Gluten-Free)

    Ingredients:


    6 cups water
    3 cups (360 g) chickpea flour
    1 teaspoon each salt and freshly ground black pepper
    3 tablespoons olive oil
    2 tablespoons parsley, chopped
    2 tablespoons oregano, chopped


    Instructions:


    1. Generously grease a baking dish with butter or oil and set aside.
    2. Bring a large pot of water to a boil.
    3. Once the water is boiling, reduce the heat to medium. Gradually stir in the chickpea flour (in batches, not all at once).
    4. Whisk for about 10 minutes until the mixture is smooth and thick (the fewer lumps, the better).
    5. Stir in the olive oil, herbs, and a little salt and pepper (to taste).
    6. Pour the chickpea mixture into a greased baking dish and spread it out in an even layer. When the mixture has cooled slightly, cover with cling film. Refrigerate for at least 1 hour (or overnight).
    7. Then preheat the oven to 200°C.
    8. Line a large baking tray with baking paper. Remove the firm dough from the fridge and cut into thick “sticks”.
    9. Arrange them on the baking tray and brush with a little olive oil.
    10. Bake for 10 minutes, then turn over, brush again with oil and bake for another 10 minutes (until slightly golden and crispy).
    11. Remove from the oven, season generously with salt and serve with your favourite sauce.
