Sweet potato “toast” is a great idea for breakfast!
You can come up with all sorts of variations of this “toast”. This time we invite you to try “toast” with avocado, smoked salmon and poached egg.
Ingredients:
1 sweet potato
1 avocado, peeled and sliced
2 eggs
1 cucumber, peeled and sliced
150 g smoked salmon
1 tablespoon avocado oil
salt and pepper
dill (for serving)
Directions:
1. Wash and peel the sweet potato. Cut the potato lengthwise into even slices with a sharp knife.
2. Preheat the oven to 200 degrees. Lightly oil both sides of the sweet potato slices, then place them on a baking sheet lined with baking paper.
3. Bake in the oven for 30 minutes.
4. While the potatoes are baking, bring a pot of water to a boil. Poach the eggs for 3-4 minutes. Remove the eggs from the pot and place them in a bowl of room temperature water (while the potatoes are still baking).
5. Top the baked sweet potato slices with sliced avocado, cucumber, smoked salmon, and boiled egg.
