    Zucchini and Marinated Feta Skewer

    Ingredients:


    1 medium zucchini, trimmed and peeled

    For the feta cheese marinade:
    230 g feta in brine
    Extra virgin olive oil
    1 jalapeno pepper, thinly sliced
    3–4 dried chili peppers
    1–2 teaspoons dried oregano
    2–3 ​​tablespoons chopped parsley
    1 lemon (zest)

    Directions:


    1. Cut the feta into large cubes and place in a jar with a lid.
    2. In a small bowl, combine ½ cup extra virgin olive oil, the chopped jalapeno pepper, dried chili peppers, oregano, parsley, and lemon zest.
    3. Pour the prepared olive oil mixture over the feta cheese. Add more olive oil if necessary to completely coat the feta cheese.
    4. We highly recommend that you cover the jar tightly with a lid and refrigerate for 1 day before using.
    5. Next, prepare the zucchini: use a vegetable peeler to cut it into thin, long strips.
    6. Place one zucchini strip on a cutting board. Place a cube of marinated feta on the end of the strip and roll it into a roll. Repeat until you have rolled all the zucchini strips in this way.
    7. Carefully thread the three zucchini-wrapped feta cubes onto a small skewer (you can use 2 skewers for easier grilling).
    8. Grease a grill pan with a little olive oil and heat it.
    9. Place the zucchini skewers on the heated surface and cook for a couple of minutes on each side (or until the zucchini rolls start to brown).
    10. Serve the rolls while still warm, on skewers.
