    Frozen Raspberry and Chia Seed Jam

    It only takes 15 minutes and 5 ingredients!


    Ingredients:


    1 ½ cups (200 g) frozen raspberries, thawed, with juice released (or fresh - in this case, you may need to add a little water)
    2 tablespoons (20 g) chia seeds
    2-3 tablespoons (40-60 g) maple syrup (or other sweetener)
    1 teaspoon fresh lemon juice or lime juice (or more - to taste)
    ½ teaspoon vanilla extract

    Directions:


    1. Place frozen raspberries in a pot or pan and bring to a boil over low heat. Stir with a wooden spoon or spatula and press until they break up into very small pieces.
    2. Remove the pot from the heat and stir in all remaining ingredients. Use less maple syrup at first. Taste the mixture and add more if needed.
    3. Let the jam cool slightly, then pour into a clean glass container and refrigerate – the jam will thicken even more after a few hours.
    4. Spread on toast, banana bread, etc.
